Aunt Else’s Æbleskiver is dedicated to sharing the Danish family tradition of æbleskiver by offering the highest quality, local and sustainable products available. We package our time-tested, 100+ year old family recipe using Midwestern organic wheat flours and buttermilk. Æbleskiver is a traditional Danish spherical pastry, and is pronounced "EB-el-sku-wyr". The taste and texture are a cross between an American pancake and a popover. Æbleskiver are baked on the stovetop in a special Æbleskiver pan. They are traditionally filled with a slice of apple but can be creatively made to suit a range of tastes from sweet to savory. Often topped with syrup, jam, or applesauce, the sky is the limit!

Aunt Else's Æbleskiver is named in honor of Else (Andersen) Jacobsen, who lives in Morgan, Minnesota. Else and her sister, Florence (Andersen) Henriksen, passed down the family recipe, their æbleskiver pans, and the proud Danish tradition of making æbleskiver to their family, friends and neighbors. Aunt Else's Æbleskiver was established in 2008 by Lisa (Henriksen) Timek, Linda (Henriksen) Engwall, Sarah Engwall, and Chad Gillard. Lisa and Linda are Florence’s daughters and therefore, Else's nieces. Sarah is Linda's daughter. Chad was captivated after seeing æbleskiver made for the first time and can't get enough of them! The four of us hand mix and package each bag of Aunt Else’s Æbleskiver Mix in a licensed kitchen in Minneapolis. We currently use Minnesota-grown organic flours, organic buttermilk from Wisconsin, organic sugar, and sea salt. Our goal is to keep all our ingredients as local and sustainable as possible. Linda’s husband Daryl, designed our 9-hole cast iron Æbleskiver pan, which is also made locally here in Minneapolis.
